It seems every darn pic I take the pic is NOT CENTRED...
Any idea what I am doing wrong Dan?

Tim, just make sure to keep your hands steady when taking pics also try to centre the object that you want in the pic so it focuses on that item, tripod will help alot.

Taking pictures of fish in not an easy task since they move very fast & when your hands follow the object it tends to make picture blurry...

The problem is that you see in the viewfinder is not what the lens "sees" you just have to get a feel for it, some cameras have a dioper which allows one to se through the lens using the viewfinder and prevents this issues but most do not.
